...but they shouldn't be! For example the attachments inline settings in the editor. These texts can't be translated because they seem not to be part of a language file, right? But they should be! Not all users of all boards out there understand english.

And I can't find the strings for these (in the forum profile) in any of the language files.

They are part of the custom profile fields. Look there please, you can change the text there.
