Three Things I Would Like to Do on My Elkarte Site

I have three things I'd like to do on my Elkarte site, but I do not know how to go about them.

(1).  To remove items from Menu_nav

(2).  To remove Quote, Reply, Notify, etc., from recent posts (as in front-page)

(3).  To change the category header Recent Posts to anything that I want.

Any help will be appreciated.
